Yoda Sour
Ingredients
- Absinthe, to coat
- 2 ounces Pisco
- 0.8 ounce fresh lime juice
- 0.5 ounce simple syrup
- 1 large egg white
- 1 teaspoon matcha

Method
Coat the inside of a chilled coupe with 3 sprays of absinthe, discarding any excess, and set aside. Add all the remaining ingredients into a shaker and dry-shake (no ice). Fill the shaker with ice, and shake again until well-chilled. Strain into the prepared coupe. Sift matcha over a Yoda stencil to garnish.
